  4. Mettre les foies déveinés dans une casserole ajouter le vin blanc puis finir de recouvrir avec de l'eau. Ajouter enfin la graisse de canard et porter à ébullition et dès l'ébullition atteinte, retirer du feu.
  5. Passer les foies égouttés, les mixer au blender avec le beurre. Transvaser le mélange liquide dans un bol. Ajouter éventuellement les épices et l'alcool selon votre goût. Relever au piment d'Espelette, ajouter lacuillère à soupe de crème fraiche. Rectifier l'assaisonnement au besoin.
  6. Repasser un coup au blender.
  7. Verser enfin dans une petite terrine ou tout autre récipient de votre choix. Et réserver au frigo au moins 24h.
