À la sortie du four, faire tiédir le gâteau et le démouler sur une grille pour qu’il refroidisse. Le conserver à température ambiante.
  4. Remarque: Par rapport à la recette d’Alain Ducasse, j’ai divisé les proportions pour obtenir un pain plus petit. La recette d’Alain Ducasse comprend 122g de farine de seigle et 128g de farine de blé (pour mes proportions). N’ayant pas de farine de seigle sous la main, je n’ai utilisé que de la farine de blé. Et le résultat est aussi très bon!
